Simple Cornbread (in a skillet or as muffins)

Ah! I found this post sitting in my drafts and realized that I had totally forgotten to post this recipe!

Here’s another super simple recipe. What you’ll need is:

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 2 tsp baking powder
  • 1/3 cup granulated sugar
  • 1 cup milk (I used skim)
  • 1 egg, whisked
  • 1/4 cup oil
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Preheat your oven to 400°F.

Start by whisking together the dry ingredients.

Add in your wet ingredients and combine well.

This is optional, but I like to add some maple syrup as well.

Put it in the oven for 15-20 minutes or until a toothpick inserted comes out clean.

And you’re done!

This recipe also works awesome for muffins, so try it out!
