Weight Watchers Gluten-Free Bisquick Banana Bread

I have another exciting easy, healthy, AND gluten-free recipe for you all today! I don’t have any classes today, homework and thesis are pretty under control ATM, and it’s kind of a giant blizzard outside. Prime conditions for some baking, I think.


I picked up some gluten-free Bisquick last week with the idea that, at some point when we weren’t all drowning in senior-year responsibilities, the suite mates and I would have one of our Sunday Pancake Parties. That hasn’t happened yet, but in the meantime, I may as well make something nice for them to come home to after class.

This recipe is super easy. It’s basically just my Fat Free Spiced Banana Bread Muffin recipe where everything that’s already that’s already in the Bisquick mix is replaced. Also, I opted out of the other spices besides cinnamon this time.

You can make this as muffins or as a loaf, just adjust the time accordingly. A loaf will go in for about twice as long. For the record, if you make 12 muffins/servings, it should come out to about 2 points or so. Someone can check my math, but it’s around there.

Here’s what you’ll need:

  • 2 large ripe bananas
  • 1 1/2 cup Gluten-Free Bisquick pancake mix
  • 3/4 cup white granulated sugar or sugar substitute
  • 1/2 cup applesauce
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon

So simple. So delicious.

Preheat your oven to 350°F.

Start by mashing your bananas in a large bowl.


Add your sugar and mix well.


Add in your Bisquick mix.


Mix it well, then add the rest of your ingredients and combine.

Pop them in the oven for about 30 minutes or until a toothpick inserted comes out clean.

I filled my first two pretty full, so they ended up more like mini loaves. They took a little longer to cook through than they otherwise would have because of it. Also, these photos make the tops look pretty dark, but I swear that they aren’t actually burnt! Haha. Just perfectly toasted. 👌💯

Ingredients:

  • 2 larger ripe bananas
  • 1 1/2 cup Gluten-Free Bisquick pancake mix
  • 3/4 cup white granulated sugar or sugar substitute
  • 1/2 cup applesauce
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  1. Preheat oven to 350°F.
  2. Mash bananas in a large bowl.
  3. Add sugar and mix.
  4. Add in the rest of the ingredients and mix well.
  5. Pour into muffin tin or mini loaf tin.
  6. Bake for approx. 30 minutes.
  7. Enjoy!
