It’s spring break, thesis is over and done with and I want MACARONI AND CHEESE.
Let’s be real, though. During thesis week and then finals week immediately afterwards, the favorite sayings within my friend group were “Calories don’t count during thesis/finals week”. I ate a lot of pizza. And chocolate. And while I do believe that I deserved it (NO REGRETS), I’m ready to get back on track.
I found this recipe on Pinterest, so I just thought I’d share! I don’t take any credit for the original idea, but I just couldn’t keep it to myself.
The best part about this recipe is that it takes hardly any ingredients and basically no more time than making the box stuff.
- 1 1/2 cup macaroni
- 1 can low-fat cheese soup
- 3/4 cup reduced fat (I used skim) milk
- 1/2 can of water
Step 1: Boil your macaroni per the instructions on the box.
Step 2: Drain, then add back into the pot.
Step 3: Add you cheese soup, milk, and water.
Step 4: Simmer until sauce is reduced and thick.
Serve, salt and pepper to taste, and enjoy!
