3-Ingredient Weight Watchers Pumpkin Muffins

Hello all!

I was debating whether or not to actually post this, since it is so similar to a previous recipe, but then I figured why not? The extra ingredient really does make a difference, I think!

All you’ll need is:

  • 1 15 oz. can of pumpkin purée
  • 1 box spice cake mix (these points are based on the Duncan Hines Moist Deluxe Spice Cake Mix)
  • 1/3 c applesauce (I used my homemade applesauce from this recipe here)

It’s the applesauce that really makes a difference, and I especially think that the tartness of the apples that I used to make it added so much to the flavor!

So you’ll want to start by preheating your oven to 350°F.

All that you need to do is combine your 3 ingredients in a bowl and mix until smooth. It may be tough at first, and it does turn into quite a thick batter, but it will work out. Try not to over mix, though.

Spoon your batter evenly into two greased or lined muffin tins. You can get 24 muffins out of this (which is ~2 pts each), or you can make them a little bigger like I did (I think they make a pretty good on-the-go breakfast, and so the 4 pts that they turn out to be is worth it for the extra protein).

 

Bake them for 20 minutes or until a toothpick inserted comes out clean. Then you’re ready to enjoy!

Makes: 24 muffins (or 48 mini-muffins)

Ingredients:

  • 1 15 oz. can of pumpkin purée
  • 1 box spice cake mix
  • 1/3 cup applesauce

  2. Combine ingredient until smooth.
  3. Bake for 20 minutes or until toothpick comes out clean.
  4. Enjoy!
